Last week we asked clients to share their recipes for a bit of fun and positivity. To get the ball rolling we shared the first recipe, which was stuffed capsicums.
Now for dessert, we have another delicious and easy recipe, courtesy of Pam P!
LEMON DRIZZLE CAKE
185g butter
1 1/2 cups caster sugar
2 tsp grated lemon rind
3 eggs
2/3 cup buttermilk
1/4 cup lemon juice
2 cups SR flour
Beat butter, sugar and lemon until light and fluffy. Add eggs one at a time. Combine well. Combine buttermilk and lemon juice together and then add to butter mix with flour in 2 separate batches. Transfer to 22cm ring pan or large loaf tin. Cook at 180 degrees celsius for approx. 50 minutes.
Lemon syrup
1/2 cup caster sugar
1/4 cup water
1/4 cup lemon juice
Combine all in saucepan and stir over low heat until sugar is dissolved. Bring to boil, without stirring. Boil for 5 minutes. Pour hot syrup over warm cake while still in pan. Cool cake in pan before turning out.
*Please note that Pam didn’t have a picture of the cake, so instead we have found one that looks pretty much identical.
