While everyone is spending more time at home, what better time to share some of your favourite home-cooked dishes and maybe try something new!

To get the ball rolling, we have shared the first recipe, which is the creation of Melissa in Administration.
STUFFED CAPSICUM
This is a super easy meal, which should only take you 10 minutes.
The filling is made up of minced beef, a handful of chopped kale and spinach, kidney beans, 1-2 teaspoons of ground turmeric, 1-2 teaspoons of ground ginger, 1 packed of French onion soup mix, a sprinkle of salt and pepper. I cooked this on the frying pan with a good amount of olive oil.
Cut the capsicum in half and fill it with filling, grate cheese on top and cook in the oven until cheese is golden.
Tip: For extra golden cheese, place under the grill until cheese is to your liking.
OPTIONAL SIDE SALAD: I would normally make my own salad but on this occasion, I must confess, I bought the salads from Soul Origin in Marion Shopping Centre.
The salad on the left is pumpkin, couscous, roast capsicum, sun-dried tomato, shallots and rocket.
The salad on the right is beetroot, crumbled feta, rocket, and praline walnuts.
